November has finally arrived.

Black Bean Chili

Pour off ½ of the liquid from 1 can of black beans
¼ cup red wine
2 cloves pressed garlic
¼ ts Ancho chili powder
¼ ts Chipotle powder
¼ ts Cayenne powder
¼ ts Roasted chili powder
1 ts brown sugar
½ ts paprika
Put all of that in a pot……..
Simmer at medium heat for 30 minutes
Then mash beans into a paste

Add 2nd can black beans with liquid
½ sweet onion, diced & lightly browned
Deglaze pan with white wine then add to pot
Add 2 cans diced, fire roasted tomatoes w/garlic, drained
Add 1 can Navy beans, drained
½ teaspoon fine ground black pepper
2 tablespoons scotch bonnet sauce
¼ ts Ancho chili powder
¼ ts Chipotle powder
¼ ts Cayenne powder
¼ ts Roasted chili powder
1 teaspoon roasted cumin
Simmer on low heat for 4 hours
Add more pepper in stages to raise heat.

This is an earthy and densely flavored chili.
I find pairs well with a powerful Malbec.
